Thankfully, I did take a couple of pictures before and after cooking to show you.
The prep time on this is super quick, the cook time of course is a bit longer, but this is a great thing to pop in the oven and let bake while you're occupied elsewhere. By the time lunchtime arrives, your house is smelling unbelievably delicious!
Throw in the applesauce cake and it's a meal to write about!
I found my base chicken recipe at Daily Rebecca.
Paleo Roasted Chicken
- One organic, natural chicken
- Your choice of seasonings
- Your choice of vegetables. I used carrots, cabbage and onions
- Olive oil
Place chicken, breast side up, in a roasting pan. Coat with olive oil, then season according to your preference. I used sea salt, rosemary, and Trader Joe's 21 Seasoning Salute, you can find it at Amazon. Rub the seasonings on the chicken. Place your vegetables around the chicken. I stuffed the cavity also with onion and cabbage. If your chicken is small, it will cook before the vegetables are done if you leave your veggies too large(I did).
Cook, uncovered for one hour or more if needed. If you like, you can set your timer for 30 minutes and take the drippings(if any) and baste the chicken to keep it good and moist. I didn't have any liquid at 30 minutes, but mine was great. Cook another 30 or 40 minutes, depending on the size of the chicken. Mine was 3 lbs and was perfect in one hour.
LET CHICKEN SET AT LEAST 5 MINUTES BEFORE CUTTING, this allows the juices to distribute throughout the meat for a tender, juicy bird.

- cabbage
- broccoli
- brussels sprouts
- cauliflower
- onions
- bell peppers

Paleo Applesauce Cake*

Paleo Applesauce Cake
1 c. unsweetened organic applesauce
3 eggs
1/4 c. honey
1/2 tsp. vanilla extract
1 1/2 c. almond flour
1 tsp. baking soda
1/4 tsp. salt

Mix all ingredients until combined. Pour into greased round cake pan. Bake at 350 degrees for 30-35 minutes or until toothpick inserted in center comes out clean.
This cake really surprised me. It was delicious, especially smeared with a slab of organic pasture butter. I think I'm going to come up with a frosting for it next time. Stay tuned!
All in all, it was a great meal and looked good too!
